We start with the tea leaves: (black) tea is always made from the tea plant Camellia sinensis. The tea gets its typical taste and color through a fermentation process: after harvesting, the leaves are dried and gently rolled. Black tea contains theine – basically the same active ingredient as caffeine. In tea, the stimulating substance is bound to other tannins and releases its stimulating effect much more gently and with delay, but lasts longer. Black teas have a strong, robust taste, which is also influenced by factors such as weather, rainfall and nutrients in the soil.
